Kombucha is made of sweet tea fermented with a Kombucha SCOBY. You can order a Lion Heart SCOBY from FH Steinbart and brew this basic recipe:
3 quarts of water
3/4 cup of sugar
1/2 ounce of tea (half green, half black tea)
Directions: Heat the water just barely to a boil. Remove from heat and steep the tea for 1 hour. Then remove the tea and stir in the sugar. When the temperature is below 100ºF, pour into a sanitized 1-gallon jar and add the about 1/2 cup of SCOBY AND 1 cup of finished Kombucha (this is what comes in a Lion Heart SCOBY pack). Cover with a cloth and ferment between 70º-90ºF for 7-14 days. For a 2-gallon batch just double the amounts and ferment the same length of time.
